Located in the famed Boquete region in Panama, Villa Donia is owned and operated by a transplanted husband and wife from Hong Kong. On the slopes of the dormant Volcan Baru at 1400 meters, Villa Donia’s cherries grow in mineral-rich soil with the perfect amount of rainfall. The farm employs an agricultural specialist, meaning the plants are well cared for with extensive pruning and weed removal as well as soil conservation. Hand-picking several times during harvest ensure only ripe cherries are picked before being washed with water-conserving ecopulpers.
This coffee is very clean and well balanced, with a milk chocolate sweetness and a gentle, white grape-like acidity with a lingering finish.

It took some searching, but we were finally able to locate a Kenya that we thought was exceptional. This coffee is from the Kiambu District, just north of the capital, Nairobi, in the heartland of coffee production between the Aberdare range and Mount Kenya. It is part of the larger Yara Estate in which tea and coffee are grown along with some subsistence crops. Established in 1902 by a white settler, the estate was taken over by a growers association in 1971. This Yara is composed of AA coffee, which comprises approximately 20% of their production.

We are very proud to present to you our first directly-sourced coffee from El Salvador! At the beginning of the year our roasting team had the opportunity to visit a few coffee farms, mills, nurseries and labs in El Salvador, and they came back with this beauty of a Bourbon.
During their stay they were chaperoned by the inimitable Luis Rodriguez, who is a liaison between producers and importers/roasters and a producer himself. He brought them to different farms and mills, cupped many coffees with them, trying to find out what they liked, and drank copious amount of beer with them too! In the end they ended up choosing coffee from a farm operated by Gloria Rodriguez, none other than Luis' mother-in-law, and a very renowned producer in her own right, having placed in more than a few Cup of Excellence competitions in years past.
Actually being on the ground to see Gloria's hard work, her extensive wisdom and the care with which she treats her crop and her employees; these things along with the quality of her coffee made the choice very easy indeed. She even let the roasting team into her home for dinner, and drinks for a night! What a classy lady.
This is (we hope) the beginning of a long-lasting and blossoming relationship with Gloria, her family, and her awesome coffee - expect to hear more from them in the future.
We liked this coffee because of how clean it was, with wonderful caramel and chocolate flavours coming through, with pleasant floral and citrus in the background, excellent acidity, and a very smooth mouthfeel.

Pacamara is an artificial hybrid between Pacas (mutation of Bourbon discovered 1949 in Santa Ana Department) Maragogype (natural mutation of Typica discovered in Bahia, Brazil in 1870). It is immediately recognizable because of the enormous size of the bean. It combines positive traits of both parents (desirable cup quality and large beans of Maragogype; high yield and compact tree size of Pacas) to make a unique cup of coffee. This is our first Pacamara and we are very excited to share it with everyone.
Finca El Aguila is owned by Mauricio Ariz and his sons, 4th generation coffee growers; it is located in the Municipality of Chalchuapa in Santa Ana Department. They own 64 hectares of which 46 are for coffee and 14 are for a natural reserve.
Altitude: range between 1500 to 1720 m
Soil type: sandy loam and sandy clay loam
Temperature range: 18 to 24 degrees C
Rainfall: 2000 to 2500mm annually
Shade: Ingas and Copalchi with 35 trees per hectare
The Ariz family also supports the Ojo de Agua community with workers and materials to maintain two roads and provides rainwater supply from their reservoirs to the community.
In terms of what's in the cup, expect a wonderfully creamy body, bright citrus flavour with some nice spice.

This awesome coffee has returned from last year, better than ever! We were lucky to secure the top scoring lot from this beautiful finca and we are proud to present it to you for your enjoyment once again.
In 1956 Dr. Jorge Vides Molina bought a piece of land named La Bolsa, it was given that name because it is located between large mountains. It has its own spring water and two rivers go across the property, leaving an island of the drying patio, the mill, farmhouse and school. They are able to donate surplus water from the rivers and creeks on their land to nearby communities, and have achieved Rainforest Alliance Certification.
Of the three non-volcanic regions, Huehuetenango is the highest and driest under cultivation. Thanks to the dry, hot winds that blow into the mountains from Mexico’s Tehuantepec plain, the region is protected from frost, allowing Highland Huehue to be cultivated up to 6,500 feet (2,000 meters). The extreme remoteness of Huehuetenango virtually requires all producers to process their own coffee. Fortunately, the region has an almost infinite number of rivers and streams, so a mill can be placed almost anywhere.
This micro-lot has a sticky sweet aroma, like dried figs and plums, with a subtle undercurrent of flowers. Being a classic Guatemalan from Huehuetenango, it boasts a robust, winey acidity held in check by a rich, round body. The finish is resonant with dark chocolate and some spice.

This seasonal blend is a chance for our roasters to highlight their craft, rather than the bean's origin. In our opinion, a true dark roast should impart all of the positive characteristics of "roastiness" - intense chocolate and caramel notes, a smooth yet commanding mouthfeel, and a muted acidity with an undercurrent of pungency - with none of the negatives (smokiness, excessive bitterness, carbony notes). There is a very small window in which a roaster can put a stop to the roast before all is lost. We will strive to achieve that balance with each roast and we are proud to present this all new blend.

This is a seasonal three bean blend of a washed Caturra from El Mirador in Colombia with a combination of two very fruity and floral heirloom varietals from Ethiopia: a washed Yirgacheffe and a natural Sidama. This blend is designed to be enjoyed as a straight shot of espresso yet we have found it to be quite mild and pleasant in a cappuccino. Bright, floral, effervescent with creamy body.

This blend changes seasonally, and is currently composed of a directly-sourced Guatemala El Milagro from Huehuetenango providing complex notes of spice and dark fruit; the second portion is from Finca Villa Donia in Boquete, Panama, bringing a full body with chocolate and caramel notes with a background of white grape acidity.
